1 cup (160g) pitted dates
60g carrots grated
1⁄3 cup (30g) almond meal
1 tbs maple syrup (honey or rice malt syrup)
1⁄2 tsp ground cinnamon
1⁄4 tsp ground nutmeg
1⁄2 cup (45g) desiccated coconut
Place dates, carrots, almond meal, maple syrup and spices in a food processor and blend until fine and the mixture comes together.
Using wet hands, roll mixture into 12 even-sized balls and roll in coconut.
Store refrigerated in an airtight container for up to 5 days or frozen for 3 months.
