Grab & Go Broccoli Quinoa Salad

This full-flavored salad is made for batch prepping! It will keep for 3 days in the fridge, so make a few servings ready to grab and go when you head off to work.

350g broccoli cut into small florets
1⁄2 cup (90g) pre-cooked quinoa cooked according to packet directions
3 tsp olive oil
1 lemon zest & juice
salt & pepper, to taste
1 tin of cannellini beans (400g tin) drained & rinsed
1⁄2 bunch of fresh mint (80g bunch) leaves picked & roughly chopped
1 long red chilli deseeded & chopped
Place broccoli in a bowl, cover with boiling water and set aside for 5 minutes.
At the same time cook quinoa according to packet directions.
To make dressing, whisk oil, lemon zest and juice together and season with salt and pepper.
Drain broccoli, pat dry and toss with quinoa, beans, mint, chilli and dressing and season to taste.
Divide between bowls and serve immediately or divide between containers, cover and refrigerate until ready to serve. Use within 3 days.
