Baked Salmon with Kale

1 olive oil spray
300g salmon fillets 2 x 150g
1 tbs lemon juice
2 sprigs of dill chopped
1⁄2 bunch of kale (400g bunch) leaves stripped & torn
salt & pepper to taste
1 cup (180g) pre-cooked quinoa heated according to packet instructions
Preheat oven to 160°C/fan 140°C/gas 3.
Spray a large piece of foil with oil.
Place salmon in the centre, pour over lemon juice and scatter over dill.
Add kale and season the parcel with salt and pepper.
Bring sides of the foil together, scrunching to seal and bake for 15-20 minutes or until salmon flakes apart. Don't overcook it.
Divide quinoa, salmon and kale between serving plates and drizzle over any juices.
