Golden Turmeric Porridge

Our Golden Turmeric Oatmeal (or porridge) with warming spices is guaranteed to make even the coldest morning cozy. Turmeric and ginger are well known for their anti-inflammatory properties, and you can easily mix up this recipe with any fruit, nuts or seeds.

Ingredients

12 cup (50g) rolled oats (or brown rice flakes or quinoa flakes if gluten free)

12 cup (130ml) milk, reduced fat (or dairy-free alternative)

12 cup (130ml) water

2 fresh apricots half chopped & half thinly sliced (or tinned apricot)

12 tsp ground ginger or to taste

12 tsp ground cinnamon or to taste

14 tsp ground turmeric or to taste

4 tbs vanilla protein powder (or natural protein powder)

2 tbs Greek yogurt (or dairy-free alternative)

2 tbs walnuts chopped

4 tsp honey (rice malt syrup or maple syrup)

Place oats, milk, water, chopped apricots (reserving sliced apricots to serve) and spices in a saucepan and bring to a gentle simmer.

Continue stirring until thick and creamy. Remove from heat and stir through protein powder. (You may need to add a little water if too thick.)

To serve, place porridge in a bowl, top with yogurt, sliced apricots, walnuts and honey.
