Coffee Walnut Microwave Mug Muffin

2 tsp instant coffee
1 tbs water hot
1 tbs maple syrup (honey or rice malt syrup)
1 tsp vanilla extract
1⁄2 medium banana mashed
1 large egg
1⁄3 cup (45g) all-purpose flour (or gluten-free if required)
1⁄2 tsp baking powder
4 walnuts roughly chopped
In a medium bowl, dissolve coffee in hot water. Stir through maple syrup, vanilla and mashed banana.
Whisk egg and stir through banana mixture.
Add flour, baking powder and walnuts and mix until combined.
Divide batter between microwave-safe mugs and microwave on high for 60 seconds - 90 seconds or until cake is light and springy to the touch.
