Coffee Walnut Microwave Mug Muffin

2 tsp instant coffee
1 tbs water hot
1 tbs maple syrup (honey or rice malt syrup)
1 tsp vanilla extract
1⁄2 medium banana mashed
1 large egg
1⁄3 cup (45g) plain flour (or gluten-free if required)
1⁄2 tsp baking powder
4 walnuts roughly chopped
In a medium bowl, dissolve coffee in hot water. Stir through maple syrup, vanilla and mashed banana. Whisk in the egg until combined.
Combine banana, maple syrup, vanilla and egg in a bowl.
Add flour, baking powder and walnuts and mix until combined.
Divide batter between microwave-safe mugs and microwave on high for 60 seconds - 90 seconds or until cake is light and springy to the touch.
