French Toast with Banana & Hazelnuts

1 tbs flaxseed meal
1⁄2 cup (125ml) milk, reduced fat (or dairy-free alternative)
1⁄2 tsp ground cinnamon
2 thin slices (40g ea) wholegrain bread (or gluten free)
1 spray olive oil
To Serve
1⁄3 cup (40g) vanilla protein powder (or natural protein powder)
1⁄4 cup Greek yogurt (or dairy-free alternative)
1 banana (small) sliced diagonally
6 hazelnuts (peeled) chopped
2 tsp maple syrup (honey or rice malt syrup)
Whisk flaxseed meal, milk and cinnamon in a large bowl and set aside for 10 minutes to thicken.
Add bread slices and soak them, turning a few times to absorb as much of the mixture as possible.
At the same time, whisk protein powder and yogurt together until smooth.
Heat a large non-stick frypan over medium heat. Spray with oil and cook bread for 3 minutes each side, or until golden.
Divide between plates, top with protein-yogurt, banana slices and hazelnuts and drizzle over maple syrup to serve.
