Zucchini & Halloumi Patties

2 zucchini (medium) grated
250g halloumi grated
200g sweet potatoes, orange grated
1 tbs all-purpose flour (or gluten-free if required)
salt & pepper, to taste
1 head of baby romaine lettuce
1 small red chilli pepper thinly sliced
4 sprigs of fresh mint leaves picked & sliced
Squeeze as much water out of the zucchini as you can and transfer to a medium bowl.
Add halloumi, sweet potato and flour, season with salt and pepper and mix to combine.
Form mixture into 12 patties, continuing to squeeze out as much liquid as you can, (mixture will be quite loose but will firm up in the pan as the halloumi melts).
Heat a large non-stick skillet over medium-low heat and cook patties for 5 minutes each side, pressing down with a spatula, until golden on both sides. Transfer to a plate to cool slightly and firm up.
Serve patties on a lettuce leaf and top with chilli and mint.
