2 large eggs
1⁄4 cup (50g) cottage cheese
50g smoked salmon
1⁄2 head of baby cos lettuce
10 whole almonds (roasted)
6 multigrain brown rice crackers
salt & pepper, to taste
Place eggs in a saucepan of cold water and bring to the boil. Continue to simmer for 5 minutes. Remove with a slotted spoon and place in a sink of cold water to cool. Peel and cut in half.
Place cheese in a small bowl and arrange on a platter with eggs, smoked salmon, lettuce, almonds and crackers. Season with salt and pepper and serve.
