Cajun Chicken Burger

300g skinless chicken breast
olive oil spray
1 tsp Cajun seasoning
salt & pepper, to taste
2 wholegrain/wholemeal rolls, large (90g ea) (or gluten free) warmed
1 tbs tzatziki (or dairy-free alternative)
1⁄2 cup (20g) baby spinach leaves
1⁄2 medium tomato sliced
Preheat a non-stick frypan over medium-high heat.
Split chicken breast horizontally through the middle to form thin fillets. Spray with oil and rub well with seasoning.
Cook chicken for 2-3 minutes, turn and cook for another 2 minutes, or until cooked through and golden. Season with salt and pepper.
Split warm rolls in half and spread the base with tzatziki. Add spinach, tomato and chicken and top with the other half of the roll to serve.
