Turkey Burger with Hummus

1⁄2 onion finely chopped
1 garlic clove finely chopped
1⁄2 carrot (medium) grated
250g minced turkey
1⁄2 large egg whisked
1⁄2 tsp ground cumin
salt & pepper, to taste
2 wholegrain/wholemeal rolls, medium (70g ea) (or gluten free) warmed
1 tbs (20g) hummus
1⁄2 medium tomato sliced
1⁄8 red onion sliced (optional)
1 iceberg lettuce leaf shredded
Heat a large non-stick frypan over medium heat. Add onion, garlic and carrot and cook for 5-6 minutes until soft. Transfer to a bowl to cool slightly.
Add turkey, egg and cumin to the cooled vegetables. Season with salt and pepper and mix well to combine. Form into medium sized patties.
Wipe frypan down and return to medium heat. Cook patties for 8 minutes, turning once, or until cooked through. Set patties aside to cool and then cook the remaining patties.
Spread hummus onto the base of the buns, then add turkey pattie, tomato, onion, lettuce and other half of the bun to serve.
