Grilled Chicken Tacos with Salsa

300g skinless chicken breast
1⁄2 tsp ground cumin
1⁄2 tsp smoked paprika
4 corn tortillas, small (25g ea) (or wheat) warmed
2 iceberg lettuce leaves shredded
1⁄2 avocado (medium, 240g) diced
Salsa
2 medium tomatoes finely diced
1⁄2 red pepper finely diced
1⁄4 red onion finely chopped
1 tbs lime juice
4 sprigs of fresh coriander chopped
salt & pepper, to taste
To make salsa, combine ingredients in a bowl and season with salt and pepper. Set aside.
Heat a non-stick BBQ or grill over medium heat.
Rub chicken with spices and season with salt and pepper. Cook chicken for 8-10 minutes, turning once, until cooked through. Transfer to a board to rest for a few minutes, then slice.
To assemble tacos, scatter lettuce over tortillas, add avocado, chicken and spoon over salsa to serve.
