Roasted Turkey, Mashed Potato & Greens

A meal fit for the holidays in just an hour and a half, with very little prep time? It can be done! Dan's roasted turkey breasts, mashed potatoes and greens is everything you want, without the hassle.

333 1⁄3g turkey breast trimmed
2⁄3 tbs olive oil
1⁄3 tsp ground cumin
1⁄8 tsp sweet paprika
salt & pepper, to taste
400g potatoes peeled & halved
1⁄8 cup (22ml) milk, reduced fat (or dairy-free alternative)
1⁄8 tsp garlic powder
2⁄3 tbs chives chopped
1⁄3 bunch of English spinach (400g bunch) trimmed & washed
Preheat oven to 180°C/fan 160°C/gas 4 and line a baking dish with baking paper.
Mix half the oil with the spices and salt and pepper. Massage over the turkey and place in baking dish. ‘Tent’ a piece of foil loosely over the turkey and roast for 1 hour.
After 1 hour, brush with a little more oil and continue to bake, uncovered for another 20-30 minutes until cooked and juices run clear. (Or a meat thermometer inserted into the thickest part registers 75°C). Set aside to rest for 5 minutes before slicing.
At the same time, place potatoes in a saucepan of cold, salted water and bring to the boil. Cook for 15-20 minutes or until fork-tender.
Drain potatoes and return to the saucepan. Add remaining oil, milk, garlic powder, salt and pepper and mash until fluffy. Keep warm until ready to serve.
Bring a saucepan of salted water to the boil. Add spinach, stems first, and cook for 30-40 seconds until just wilted, drain immediately.
Divide turkey, mash and spinach between plates and top with chives to serve.
