Roasted Turkey, Mashed Potato & Greens

A meal fit for the holidays in just an hour and a half, with very little prep time? It can be done! Dan's roasted turkey breasts, mashed potatoes (dairy free) and greens is everything you want, without the hassle.

Ingredients

333 13g turkey breast trimmed

23 tbs olive oil

13 tsp ground cumin

18 tsp sweet paprika

salt & pepper, to taste

400g potatoes peeled & halved

18 cup (22ml) milk, reduced fat (or dairy-free alternative)

18 tsp garlic powder

23 tbs chives chopped

13 bunch of English spinach (400g bunch) trimmed & washed

Preheat oven to 180°C/fan 160°C/gas 4 and line a baking dish with baking paper.

Mix half the oil with the spices and salt and pepper. Massage over the turkey and place in baking dish. ‘Tent’ a piece of foil loosely over the turkey and roast for 1 hour.

After 1 hour, brush with a little more oil and continue to bake, uncovered for another 20-30 minutes until cooked and juices run clear.  (Or a meat thermometer inserted into the thickest part registers 75°C). Set aside to rest for 5 minutes before slicing.

At the same time, place potatoes in a saucepan of cold, salted water and bring to the boil. Cook for 30 minutes or until fork-tender.

Drain potatoes and return to the saucepan. Add remaining oil, milk, garlic powder, salt and pepper and mash until fluffy.  Keep warm until ready to serve.

Bring a saucepan of salted water to the boil. Add spinach, stems first, and cook for 30-40 seconds until just wilted, drain immediately.

Divide turkey, mash and spinach between plates and top with chives to serve.
