Date Toffee Candy Apples

For a sweet treat that brings back childhood memories of Halloween and fairgrounds, pick a few Granny Smiths from the orchard (or grocery store!) and whip up Dan's delicious, and better for you, Date Toffee Candy Apples.

1⁄3 cup (60g) pitted dates
1⁄2 cup (125ml) water boiling
1⁄2 tbs coconut oil
1⁄4 tsp ground cinnamon
2 Granny Smith apples (medium)
12 1⁄2g whole almonds (roasted) chopped
12 1⁄2g 70% dark chocolate (or dairy-free alternative) chopped
2 bamboo skewers
Place dates in boiling water and set aside for 15 minutes.
Strain dates, reserving the liquid.
Blend dates and half the liquid with coconut oil and cinnamon until smooth, scraping down the sides as needed. Transfer to a soup bowl and cool to room temperature.
Spear the apple with a skewer and dip into the date-caramel mixture.
Sprinkle over almonds and chocolate and refrigerate to set completely before serving.
Alternatively, for a more kid-friendly snack: chop apples into wedges first, and serve with caramel dipping sauce, almonds and chopped chocolate on the side.
