Smashed Chickpea, Feta & Tomato Toast

1 tin of chickpeas (400g tin) drained & rinsed
1 lemon juiced
salt & pepper, to taste
2 thin slices (40g ea) rye bread (or gluten free) toasted
200g cherry tomatoes halved
60g feta
2 sprigs of parsley leaves picked & roughly chopped
2 tsp dukkah (a mix of chopped almonds, sesame seeds & ground cumin)
Mash chickpeas and lemon juice in a bowl and season with salt and pepper.
Spread chickpea mash on toast, add tomatoes and crumble over feta.
Scatter over parsley and dukkah and season with salt and pepper to serve.
