Chickpea & Edamame Power Bowl

2 tsp hulled tahini
6 tsp lemon juice
salt & pepper, to taste
2 heads of baby cos lettuce chopped
1 1⁄3 cup (200g) cherry tomatoes halved
1⁄2 cup (70g) frozen podded edamame defrosted
1 tin of chickpeas (400g tin) drained & rinsed
2 tbs pumpkin seeds (pepitas)
Whisk tahini and lemon juice together in a bowl and season with salt and pepper.
Add lettuce, tomatoes, edamame and chickpeas and toss well.
Transfer to a serving bowl and top with pumpkin seeds to serve.
