Ingredients

1 cup (250ml) milk, reduced fat (or dairy-free alternative)

14 cup (30g) vanilla protein powder (or natural protein powder)

2 tbs chia seeds

1 medium banana mashed

2 pitted medjool dates roughly chopped

pinch of salt

For Layering

34 cup (120g) fresh or frozen blueberries

2 tbs toasted muesli or granola (or gluten free)

14 cup (30g) fresh or frozen raspberries

Combine milk, protein powder, chia, banana, dates and salt in a bowl and set aside for at least 4 hours, or overnight, stirring once to evenly distribute the chia.

At the same time in a small saucepan, simmer blueberries with a dash of water over medium heat for at least 5 minutes to breakdown and thicken to a sauce consistency. Place in the fridge to cool.

When ready to serve, layer blueberry compote and chia mixture into small jars or glasses. Top with muesli and berries to serve.
