1⁄3 cup (75g) Greek yogurt (or dairy-free alternative)
1⁄8 cup (18g) vanilla protein powder (or natural protein powder)
1⁄8 cup (30g) honey (rice malt syrup or maple syrup)
1⁄4 avocado (medium) ripe
1⁄4 cup (8g) baby spinach leaves or kale
2⁄3 sprig of fresh mint leaves picked
1⁄8 cup (9g) shredded coconut
olive oil spray
Place all ingredients except coconut in a blender and mix until smooth.
Once smooth, add the coconut and fold through with a spoon to retain texture.
Lightly spray 10 popsicle moulds (or ice cube trays) with oil and divide mixture between moulds.
Freeze for 4 hours before serving.
