1 1⁄2 cups (60g) baby spinach leaves
1 whole wheat pita bread or pocket, large (3 1/2 oz) (or gluten free)
1 cup (240g) fresh ricotta
250g broccoli cut in florets & thinly sliced
1⁄2 cup (60g) mozzarella grated
1⁄2 cayenne chilli pepper thinly sliced
salt & pepper, to taste
Preheat oven and a pizza stone or baking sheet to 390°F/fan-forced 360°F.
Place spinach in a sieve and pour boiling water over to wilt. Quickly rinse under cold water and squeeze out excess water with your hands.
Place pita on baking paper and spread with ricotta, leaving a 1 inch border.
Top with broccoli and mozzarella and scatter over spinach and sliced chilli. Season with salt and pepper.
Carefully remove baking sheet or stone from the oven and transfer baking paper with pizza to the sheet/stone.
Bake for 10 minutes until crisp.
Cut into slices and serve immediately.
