1 1⁄2 cups (60g) baby spinach leaves
1 wholemeal pita bread or pocket, large (100g) (or gluten free)
1 cup (240g) fresh ricotta
250g broccoli cut in florets & thinly sliced
1⁄2 cup (60g) mozzarella grated
1⁄2 long red chilli thinly sliced
salt & pepper, to taste
Preheat oven and a pizza stone or oven tray to 200°C/fan 180°C/gas 6.
Place spinach in a sieve and pour boiling water over to wilt. Quickly rinse under cold water and squeeze out excess water with your hands.
Place pita on baking paper and spread with ricotta, leaving a 2cm border.
Top with broccoli and mozzarella and scatter over spinach and sliced chilli. Season with salt and pepper.
Carefully remove oven tray or stone from the oven and transfer baking paper with pizza to the tray/sheet.
Bake for 10 minutes until crisp.
Cut into slices and serve immediately.
