Sheet-pan Strawberry Pancakes

1 medium banana mashed
1⁄2 cup (125ml) milk, reduced fat (or dairy-free alternative)
1 large egg
1⁄2 cup (70g) plain flour (or gluten-free if required)
1⁄3 cup (40g) vanilla protein powder (or natural protein powder)
1 1⁄2 tsp baking powder
1 cup (140g) fresh strawberries sliced
2 tsp maple syrup (honey or rice malt syrup)
Preheat oven to 180°C/fan 160°C/gas 4 and line a small rectangular baking tin with baking paper.
Whisk together banana, milk and egg in a large bowl.
Add flour, protein powder and baking powder and stir to combine.
Pour into prepared tin and scatter over strawberries. Bake for 15 minutes or until lightly golden and cooked through.
Cool for 5 minutes then remove from tin and cut into equal portions.
Divide between serving plates and drizzle with maple syrup to serve.
