Protein Powerhouse Parfait

This powerhouse breakfast is adapted from Luke's book The A-List Diet & Fitness Plan. It's full of protein and easy to adapt by swapping fresh for frozen berries, or another favorite fruit.

3⁄4 cup (190g) Greek yogurt (or dairy-free alternative)
1⁄3 cup (40g) vanilla protein powder (or natural protein powder)
2 tbs water
1⁄2 cup (80g) fresh blueberries
1⁄2 cup (70g) fresh raspberries
1 tbs sunflower seeds (kernels)
1 tbs pumpkin seeds (pepitas)
2 tsp shredded coconut toasted
2 tsp maple syrup (honey or rice malt syrup)
Whisk yogurt, protein powder and water together in a large bowl to blend. Depending on the protein powder, you may need to add a little more water if too thick.
Divide between bowls and top with berries, seeds and coconut.
Drizzle over maple syrup to serve.
