Ingredients

1 avocado (medium, 240g)

90g pre-cooked chicken breast chopped

12 lime zest & juice

1 sprig of fresh coriander chopped

1 jalapeño chilli reserve a few slices to serve & chop remainder

salt & pepper, to taste

1 macadamia nuts or cashews, finely grated

selection of crackers & raw vegetable sticks, to serve

Place the avocado flesh in a bowl and mash with a fork.

Add chicken, lime zest and juice, coriander and chopped jalapeno. Mix well with a spoon and season with salt and pepper.

Top with remaining jalapeno and grated macadamia and serve with a selection of crackers and raw vegetable sticks.
