Chicken & Roasted Pepper Wrap

1 spray olive oil
2 whole wheat pita breads or pockets, small (2 oz ea) (or gluten free)
2 tbs hummus
150g pre-cooked chicken breast sliced
150g roasted red bell peppers, in brine sliced
1 cup (40g) baby spinach leaves
salt & pepper to, taste
Heat a non-stick skillet over medium heat.
Spray skillet with oil and cook one side of each wrap for a few minutes or until golden.
Remove from the skillet, spread with hummus, add chicken, peppers and spinach and season with salt and pepper.
Roll up, cut in half and serve immediately.
