3-ingredient Peanut Butter Cookies

Don't have all the ingredients to make cookies? Yes you do! Dan's love-at-first-bite cookies magically come together using only 3 ingredients. They're free of refined sugar, and you can easily swap the peanut butter for cashew or almond butter, and up the flavor with sea salt, cinnamon or vanilla.

1⁄8 cup (50g) crunchy natural peanut butter (or other nut butter)
1⁄8 large egg
1⁄8 tbs maple syrup (honey or rice malt syrup)
Preheat oven to 180°C/fan 160°C/gas 4 and line a baking tray with baking paper.
Combine ingredients in a mixing bowl, stirring well with a wooden spoon.
Roll into small balls and place on prepared tray. With a wet fork, press down lightly to form a criss-cross pattern on the tops.
Bake for 10 minutes, then carefully transfer to a wire rack to cool.
These cookies may be fragile, so cool completely before transferring to a storage container.
