Cheesy Black Bean Quesadillas

This toasty, cheesy, protein-packed lunch or easy dinner is impossible to resist. Switch it up with any canned beans you have in the pantry.

1 tin of black beans (400g tin) drained & rinsed
1⁄3 cup (40g) cheddar cheese grated
1⁄4 cup (65g) chunky tomato salsa
1⁄2 cup (20g) baby spinach leaves roughly chopped
2 sprigs of fresh coriander roughly chopped
salt & pepper, to taste
2 corn tortillas, large (40g ea) (or wheat)
1 spray olive oil
1 lime cut in wedges
Preheat a large non-stick frypan over medium heat.
Combine beans, cheese, salsa, spinach and coriander in a bowl.
Divide filling between the tortillas spreading down one side. Season and fold in half.
Spray frypan and add quesadillas to the pan. Cook for 4-5 minutes, turning once, until golden and cheese has melted.
Cut in half and serve immediately with lime wedges.
