Cheesy Black Bean Quesadillas

Ingredients

1 can of black beans (14 oz can) drained & rinsed

13 cup (40g) cheddar cheese grated

14 cup (65g) chunky tomato salsa

12 cup (20g) baby spinach leaves roughly chopped

2 sprigs of fresh cilantro roughly chopped

salt & pepper, to taste

2 large (1 1/2 oz ea) corn tortillas (or wheat)

1 spray olive oil

1 lime cut in wedges

Preheat a large non-stick skillet over medium heat.

Combine beans, cheese, salsa, spinach and cilantro in a bowl.

Divide filling between the tortillas spreading down one side. Season and fold in half.

Spray skillet and add quesadillas to the skillet. Cook for 4-5 minutes, turning once, until golden and cheese has melted.

Cut in half and serve immediately with lime wedges.
