Apple Raisin Muffins (Air Fryer Friendly)

1⁄2 medium banana mashed
1⁄3 large egg
1⁄8 cup (11ml) olive oil
1⁄8 cup (32ml) maple syrup (honey or rice malt syrup)
1⁄3 apple one grated, one diced
1⁄3 cup (45g) whole wheat spelt flour (or gluten free)
1⁄8 tsp ground cinnamon
1⁄8 tsp baking soda
pinch of salt
1⁄8 cup (6 2⁄3g) raisins
Preheat oven to 375°F/fan-forced 345°F and grease or line a regular 12-hole muffin tin.
In a small bowl, whisk together mashed bananas, eggs, oil, maple syrup and the grated apple until well combined.
In a separate large bowl, combine flour, cinnamon, baking soda and salt.
Add diced apple and raisins stirring well to combine.
Pour wet ingredients into dry, mixing until just combined.
Divide batter between 12 muffin holes and bake for 15-20 minutes or until golden brown and an inserted toothpick comes out clean.
Cool for 5 minutes in tin then transfer to a wire rack and eat warm or cool to room temperature. Enjoy!
AIR FRYER METHOD:
Preheat air fryer to 320°F.
Ensure your muffin tin will fit in the air fryer, if not use a smaller tin, individual silicone muffin cups or ramekins and cook in batches.
Follow recipe instructions from step 2 then bake for 10-12 minutes or an inserted toothpick comes out clean.
Cool for 5 minutes before removing from tin, cups or ramekins.
