Apple Raisin Muffins

1⁄2 medium banana mashed
1⁄3 large egg
1⁄8 cup (11ml) olive oil
1⁄8 cup (32ml) maple syrup (honey or rice malt syrup)
1⁄3 apple one grated, one diced
1⁄3 cup (45g) wholemeal spelt flour (or gluten free)
1⁄8 tsp ground cinnamon
1⁄8 tsp bi-carb soda
1⁄8 tsp salt
1⁄8 cup (6 2⁄3g) raisins
Preheat oven to 190°C/fan 170°C/gas 5 and grease or line a regular 12-hole muffin tin.
In a small bowl, whisk together mashed bananas, eggs, oil, maple syrup and the grated apple until well combined.
In a separate large bowl, combine flour, cinnamon, bi-carb soda and salt.
Add diced apple and raisins stirring well to combine.
Pour wet ingredients into dry, mixing until just combined.
Divide batter between 12 muffin holes and bake for 15-20 minutes or until golden brown and an inserted toothpick comes out clean.
Cool for 5 minutes in tin then transfer to a wire rack and eat warm or cool to room temperature. Enjoy!
