Ultimate Plant-based Sandwich

1 olive oil spray
200g firm tofu sliced
salt & pepper, to taste
2 thin slices (40g ea) wholegrain bread (or gluten free)
2 tbs hummus
1⁄4 avocado (medium) mashed
1⁄4 cup alfalfa sprouts well rinsed
1⁄2 cup rocket
1 Lebanese cucumber thinly sliced
1 medium tomato thinly sliced
2 tsp sriracha sauce (chilli garlic sauce) optional
Spray a non-stick frypan with olive oil and place on on medium high heat, season tofu on both sides with salt and pepper and cook for 3-5 minutes or until golden. Set aside to keep warm.
Wipe out pan, spray with oil and add bread slices, pressing down to toast, turn and toast other side.
Spread hummus on half the toast, add avocado, sprouts, rocket, cucumber, tomato and tofu and season with salt and pepper. Drizzle over sriracha if using.
Top with remaining toast, cut in half and serve.
