Chipotle-honey Salmon & Broccolini Bake

This protein-rich dinner is going straight into weeknight rotation. A quick prep, then throw it in the oven and dinner is served in less than 30 minutes. Don't have broccolini? Sub in broccoli, zucchini or asparagus.

Ingredients

2 tsp honey (rice malt syrup or maple syrup)

1 12 tsp chipotle chilli seasoning or to taste

2 garlic cloves minced or 1/4 tsp garlic powder

240g salmon fillets 2 x 120g

1 bunch of broccolini (160g bunch) trimmed

salt & pepper, to taste

1 cup (160g) pre-cooked brown rice warmed according to packet directions

Preheat oven to 180°C/fan 160°C/gas 4 and line a baking dish with baking paper.

Whisk honey, chipotle and garlic in a medium bowl. Add salmon and toss to coat.

Arrange salmon and broccolini in baking dish and season with salt and pepper.

Bake for 8-10 minutes or until salmon is cooked to your liking and broccolini is crisp-tender and bright green.

Serve salmon and broccolini with warmed rice.
