5-ingredient Baked Courgette & Cheese Bites

1⁄3 courgette (medium) grated
1⁄3 large egg lightly beaten
1⁄4 garlic clove minced
1⁄4 cup (24g) cheddar cheese grated
1⁄8 cup (10g) almond meal
salt & pepper, to taste
Preheat oven to 200°C/fan 180°C/gas 6 and line a large baking tray with baking paper.
Squeeze grated courgettes between your hands, or use a clean tea towel to remove as much liquid as possible and transfer to a bowl.
Add egg, garlic, cheese, almond meal and salt and pepper. Mix well to combine.
Form heaped tablespoons of mixture into 10 balls and flatten the tops slightly. Arrange on tray and bake for 15 minutes or until lightly golden.
Store refrigerated in an airtight container for up to 3 days or frozen for up to 3 months.
