Roasted Tomato Salad with Risoni & Feta (Air Fryer Friendly)

200g cherry tomatoes mixed colours if possible
2 garlic cloves chopped
1⁄2 tsp chilli flakes
1 tsp olive oil
salt & pepper, to taste
3⁄4 cup (90g) risoni pasta, dried (or gluten free)
100g low-fat feta cheese crumbled
4 sprigs of fresh basil leaves picked & roughly torn, plus extra to serve
2 tsp pine nuts toasted
Preheat oven to 180°C/fan-forced 160°C/gas 4 and line a baking tray with baking paper.
Toss tomatoes, garlic, chilli and oil and season with salt and pepper. Transfer to tray and roast for 20-25 minutes or until the tomatoes are soft and caramelised. Cool to room temperature, reserving any juices.
Meanwhile, cook risoni in a saucepan of boiling salted water according to packet instructions. Drain into a sieve and cool under cold running water. Drain again.
Gently toss pasta with half the feta, torn basil leaves and the tomato mixture and season with salt and pepper.
Divide between serving bowls and top with remaining feta, pine nuts and extra basil leaves.
AIR FRYER METHOD:
Preheat air fryer to 180°C.
Toss tomatoes, garlic, chilli, oil and salt and pepper together and transfer to an air fryer safe dish or a small tray that fits in the air fryer.
Cook for 12-14 minutes, tossing halfway through, until tomatoes are soft and caramelised. Set aside to cool.
At the same time, follow step 3 to cook risoni.
Once tomatoes are cooked reduce air fryer to 160°C and toast pine nuts on a piece of foil for 2-3 minutes. Watch carefully, they will brown very quickly.
Continue with steps 4 and 5 to serve.
