Super Easy Salmon Tacos

What makes Dan's Super Easy Salmon Tacos so fresh? The zesty mango salsa. Serve it up post-workout, on a warm night or when you've got a crowd to impress! You can also substitute white fish, grilled chicken or tofu for salmon.

260g salmon fillets 2 x 130g fillets
salt & pepper, to taste
1⁄2 cup (70g) fresh or frozen mango diced
1⁄2 red onion finely diced
1⁄4 bunch of fresh coriander (80g bunch) roughly chopped
1 lime half zested & juiced & half cut in wedges
2 corn tortillas, large (40g ea) (or wheat)
1 cup (100g) red cabbage shredded
Preheat oven to 180°C/fan 160°C/gas 4.
Place salmon in a small roasting dish lined with baking paper and season with salt and pepper. Roast for 8-10 minutes or until cooked through.
Meanwhile, in a small bowl combine mango, onion, coriander, lime zest and juice and season with salt and pepper.
Place a medium frypan over medium-high heat. Add tortillas and cook for 1-2 minutes each side until warmed through.
Divide whole (or flaked) salmon pieces, mango salsa and cabbage between warm tortillas and serve with lime wedges.
