Spicy Beef Chilli with Black Beans

1⁄2 tin of black beans (400g tin) drained & rinsed
salt & pepper, to taste
1⁄2 cup (80g) pre-cooked brown rice heated according to packet directions
1⁄4 avocado (medium) sliced
1⁄8 cup (40g) Greek yogurt (or dairy-free alternative)
Spicy Beef Chilli
1⁄2 brown onion chopped
1⁄2 olive oil spray
1 garlic clove minced
250g extra lean minced beef
1 1⁄2 tsp Mexican spice mix (a mix of ground cumin, paprika & chilli) or more or less to taste
1 tin of crushed tomatoes (400g tin)
1⁄4 bunch of fresh coriander (80g bunch) leaves picked & stems finely chopped
salt & pepper, to taste
To make Spicy Beef Chilli, heat a large non-stick saucepan over medium heat, add onion, spray with oil and cook for 5 minutes, or until soft.
Add garlic and cook, stirring for another minute.
Increase heat to high, add beef and spice mix and cook, stirring occasionally until meat has browned.
Add tomatoes, coriander stems and season with salt and pepper. Bring to the boil, then reduce to a simmer and cook uncovered for 20-25 minutes until sauce has thickened.
Stir through beans and continue to cook, stirring until beans are heated through. Adjust seasoning.
Divide chilli and heated rice between bowls, top with avocado and coriander leaves and serve with yogurt.
Note:
Spicy Beef Chilli will keep in the fridge for 3 days or freezer for up to 3 months.
