Cheat’s Chicken Fried Rice

Say hello to your new dinner hero. Only 6 ingredients required and so easy to flex. PS. Don't tell anyone, but we've made it even easier by using pre-cooked packet rice. (Leftover rice from last night's dinner will work, too.)

250g minced chicken

2 tbs kecap manis (sweet soy sauce) (or gluten-free equivalent)

2 large eggs whisked

200g frozen peas, corn & peppers (or other frozen veggie mix)

23 cup (100g) pre-cooked brown rice

2 spring onions thinly sliced

salt & pepper, to taste

Heat a large non-stick frypan over medium-high heat.

Add chicken and cook, stirring to break up the meat, for 4-5 minutes or until lightly browned and cooked through.

Stir through kecap manis, cooking for a minute or until caramelised and sticky.

Push chicken to one side of the pan and add egg. As the egg starts to set, move it gently with a spatula to allow the unset egg to reach the pan and cook.

Add vegetables, rice and most of the spring onion to the pan and cook, stirring for 2-3 minutes or until heated through. Adjust seasoning.

Divide between serving bowls and top with remaining spring onion to serve.
