Chickpea “Tuna” Melt (Air Fryer Friendly)

Dan's vegetarian twist on the classic tuna melt makes for a deliciously satisfying and protein-packed meal that's ready in just 20 minutes - use the air fryer option for extra crispy tortillas!

2 large eggs
1 tbs Greek yogurt (or dairy-free alternative)
1⁄2 tsp Dijon mustard
1⁄2 tin of chickpeas (400g tin) drained & rinsed
1 tbs capers roughly chopped
1 dill pickles roughly chopped
1 carrot (medium) finely diced
1 celery stalk finely diced
salt & pepper, to taste
2 corn tortillas, small (25g ea) (or wheat)
1⁄3 cup (40g) cheddar cheese grated
Place eggs in a saucepan of cold water and bring to the boil. Continue to simmer for 8 minutes. Remove with a slotted spoon and place in a sink of cold water to cool. Peel and chop.
At the same time, combine yogurt and mustard in a medium sized bowl. Add eggs, chickpeas, capers, pickles, carrot, celery, salt and pepper. Stir well to thoroughly combine.
Preheat oven grill to high and toast one side of the tortillas.
Spread chickpea mix onto uncooked side of tortillas and scatter over cheese.
Return to the oven grill and cook for a few minutes until the cheese has melted.
Cut in half and serve.
AIR FRYER METHOD:
Preheat air fryer to 175°C.
Prepare the filling, following steps 1 and 2 of the recipe.
Place the tortillas in the air fryer basket and cook for 2-3 minutes to lightly crisp up. Remove.
Spread mix over one side of each tortilla then sprinkle cheese on top.
Return tortillas to air fryer basket and cook for 4-5 minutes or until golden and bubbly.
Cut in half and serve.
