6-ingredient Roasted Cauliflower Parmesan

A veggie-packed twist on a classic comfort dish - this cauliflower parmesan (or parmigiana for the Aussies) comes together with just six ingredients. Make it in the oven or use the air fryer for perfect caramelization in a fraction of the time. Either way, it's golden, cheesy and satisfying.

Ingredients

500g cauliflower cut into 2 x 9 oz cauliflower steaks, 3/4 inch thick

1 spray olive oil

salt & pepper, to taste

1 cup (250g) tomato & basil sauce or puree ore pre-prepared marinara sauce

2 tbs cheddar cheese grated

12 cup (60g) parmesan finely grated

2 cups (60g) arugula

1 can of cannellini beans (14 oz can) drained & rinsed

Preheat oven to 430°F/fan-forced 400°F. Line an ovenproof baking dish with baking paper.

Spray cauliflower steaks with oil and season with salt and pepper.

Heat a large non-stick skillet over medium-high heat.  Add steaks and cook for 3 minutes each side or until golden.

Spread steaks with a ¼ of the sauce and spread the remainder in the prepared baking dish.

Add steaks to the dish and scatter over cheddar cheese and most of the parmesan.

Bake for 15-20 minutes or until tender and the cheese is golden. (Cover with foil if over-browning before cauliflower is tender.)

Whilst cauliflower cooks, combine arugula, beans, reserved parmesan and season with salt and pepper.

Serve cauliflower parmesan with salad.

 

AIR FRYER METHOD:

Preheat air fryer to 400°F. 

Spray both sides of the cauliflower steaks with oil, season and place in air fryer basket. (You may need to cut them in half to fit)

Bake for 10-12 minutes, turning halfway, or until golden brown.

Spread 3/4 of the tomato sauce in an heatproof dish that fits in the air fryer basket, add cauliflower and spread the remaining tomato sauce over the top. Sprinkle over the cheese (saving some parmesan for the salad).

Return dish to air fryer for 3-5 minutes or until the cheese has is melted and golden.

Make the salad and serve.
