Ingredients

1 tsp ground cumin

12 tsp ground turmeric

salt & pepper, to taste

200g firm tofu 1/2 inch sliced

1 spray olive oil

2 red bell peppers deseeded & diced

1 red onion thinly sliced

3 garlic cloves sliced

12 tsp smoked paprika

1 can of crushed tomatoes (14 oz can)

12 cup (125ml) water

To Serve

2 tbs Greek yogurt (or dairy-free alternative)

3 sprigs of fresh cilantro roughly chopped

2 whole wheat pita breads or pockets, medium (2 1/2 oz ea) (or gluten free) split & toasted

Methodbased on 2 servings

Combine cumin, turmeric and salt and pepper in a small bowl.

Pat tofu dry with paper towel and toss to coat with half the spice mix.

Heat a large, non-stick skillet over medium heat.

Spray tofu with oil and add to skillet. Cook for 2-3 minutes each side or until golden. Remove from skillet and set aside.

Add bell peppers, onion and garlic to the hot skillet and cook, covered, stirring occasionally for 10 minutes. Remove lid, cook uncovered for further 3-5 minutes or until the vegetables char lightly and are tender. (Add a splash of water if the mixture begins to stick to the skillet.)

Stir through paprika and remaining spices and cook for 30 seconds or until fragrant. Season well with salt and pepper.

Add tomatoes and water, scraping any charred pieces from the bottom of the skillet. Bring to the boil and simmer gently, stirring occasionally, for 5 minutes or until thickened slightly.

Return tofu to the skillet, nestling it into tomato mixture and simmer for a further 2-3 minutes or until heated through. Adjust seasoning.

Divide between bowls, top with yogurt and cilantro and serve with warm bread.
