200g firm tofu
Batter
1⁄3 cup (80ml) soy milk (or dairy alternative)
3 tsp tapioca flour
salt & pepper, to taste
Crumb
2 tbs panko breadcrumbs (or gluten-free if required)
2 tbs wasabi peas finely crushed
1 spray olive oil
Salad
3⁄4 cup (75g) red cabbage finely shredded
1⁄3 cup (55g) pre-cooked brown rice cooked according to packet directions
1⁄3 cup (50g) kimchi
1⁄3 cup (50g) frozen podded edamame defrosted
1⁄2 continental cucumber cut into thin rounds
1⁄4 avocado (small, 180g) sliced
1 tsp sesame seeds or black sesame seeds
Dipping Sauce
1⁄4 cup (60g) Greek yogurt (or dairy-free alternative)
1 tbs sriracha sauce (chilli garlic sauce)
Preheat airfryer to 190°C and spray airfryer basket with oil.
Alternatively, 200°C/fan-forced 180°C/gas 6 and line a baking tray with baking paper.
Blend batter ingredients together and allow to sit for a few minutes to thicken.
In a separate bowl, combine breadcrumbs, wasabi peas and season with salt and pepper.
Pat tofu dry with paper towel, and cut into 1.5cm thick triangles.
Dip tofu pieces into batter, then breadcrumb mix.
Arrange in basket in a single layer, leaving space between for even cooking. Spray with oil and cook for 12-15 minutes, turning halfway or until they are golden and crisp on both sides.
If using the oven, place tofu nuggets evenly onto baking tray. Spray well with oil and bake for 15-20 minutes, turning halfway until golden brown and crisp.
Meanwhile, combine dipping sauce ingredients in a small bowl.
To assemble, divide cabbage, rice, kimchi, edamame, cucumber and avocado between bowls. Add tofu, scatter over sesame seeds and serve with dipping sauce.
