Kiwi Green Chia Pudding

Pudding
1 cup (250ml) coconut water
1⁄3 cup (40g) vanilla protein powder (or natural protein powder)
2 tbs rolled oats (or brown rice flakes or quinoa flakes if gluten free)
1 cup (40g) baby spinach leaves
1 kiwi fruit roughly chopped
1⁄2 lime juice & zest
1⁄4 cup (45g) chia seeds
To Serve
1 kiwi fruit thinly sliced into rounds
1⁄2 cup (80g) fresh blueberries
2 sprigs of fresh mint leaves picked
Blend pudding ingredients (except chia seeds) in a small food processor until smooth. Transfer to a bowl, stir through chia seeds and set aside to thicken for 10 minutes.
Add a small amount of pudding to the base of two glasses.
Arrange the kiwi fruit slices around the edges of the glasses and gently fill them with the remaining pudding.
Top with blueberries and mint leaves to serve.
