Ingredients

18 34g pitted medjool dates roughly chopped

18 cup (28 18g) crunchy natural peanut butter (or other nut butter)

18 cup (9 13g) rolled oats (or brown rice flakes or quinoa flakes if gluten free)

18 cup (2 12g) raw cacao powder (or cocoa powder)

18 cup (2 12g) desiccated coconut

Place all ingredients (except desiccated coconut) into a food processor and mix until combined.

Divide mixture into 16 equal portions. Form into balls and roll in coconut. Refrigerate for an hour before serving.
