18 3⁄4g pitted medjool dates roughly chopped
1⁄8 cup (28 1⁄8g) crunchy natural peanut butter (or other nut butter)
1⁄8 cup (9 1⁄3g) rolled oats (or brown rice flakes or quinoa flakes if gluten free)
1⁄8 cup (2 1⁄2g) raw cacao powder (or cocoa powder)
1⁄8 cup (2 1⁄2g) desiccated coconut
Place all ingredients (except desiccated coconut) into a food processor and mix until combined.
Divide mixture into 16 equal portions. Form into balls and roll in coconut. Refrigerate for an hour before serving.
