Loaded Sweet Potato Fries

1 olive oil spray
400g sweet potatoes, orange peeled & sliced into 1 cm thick fries
salt & pepper, to taste
2 tsp olive oil
2 spring onions white & green part chopped separately
3 garlic cloves minced
1 tin of crushed tomatoes (400g tin)
1 tin of black beans (400g tin) drained & rinsed
1 tsp ground chilli
1⁄4 cup (60g) Greek yogurt (or dairy-free alternative)
3 sprigs of fresh coriander roughly chopped
1 tsp hot chilli sauce or to taste
Preheat oven to 200°C/fan 180°C/gas 6. Spray a wire rack with oil and place over a baking tray.
Spread fries over rack, spray with oil, season with salt and pepper and cook for 15-20 minutes or until crisp and golden brown, turning halfway through.
At the same time, heat oil in a medium saucepan over medium-low heat and saute white part of the onion and garlic for 3 minutes.
Stir through tomatoes, black beans and chilli and season with salt and pepper. Simmer for 10 minutes or until mixture has reduced and thickened.
Divide fries and bean mixture between plates. Top with yogurt, remaining green spring onion, coriander and hot sauce (if using) to serve.
