Loaded Sweet Potato Fries

1 olive oil spray
400g sweet potatoes, orange peeled & sliced into 1/2 inch thick fries
salt & pepper, to taste
2 tsp olive oil
2 scallions white & green part chopped separately
3 garlic cloves minced
1 can of crushed tomatoes (14 oz can)
1 can of black beans (14 oz can) drained & rinsed
1 tsp ground chilli
1⁄4 cup (60g) Greek yogurt (or dairy-free alternative)
3 sprigs of fresh cilantro roughly chopped
1 tsp hot chilli sauce or to taste
Preheat oven to 390°F/fan-forced 360°F. Spray a wire rack with oil and place over a baking sheet.
Spread fries over rack, spray with oil, season with salt and pepper and cook for 15-20 minutes or until crisp and golden brown, turning halfway through.
At the same time, heat oil in a medium saucepan over medium-low heat and saute white part of the scallions and garlic for 3 minutes.
Stir through tomatoes, black beans and chilli and season with salt and pepper. Simmer for 10 minutes or until mixture has reduced and thickened.
Divide fries and bean mixture between plates. Top with yogurt, remaining green scallions, cilantro and hot sauce (if using) to serve.
