Chicken Fajita Skewers with Tortillas

4 bamboo skewers pre-soaked
300g skinless chicken breast cubed
1⁄2 tsp smoked paprika or more to taste
1⁄4 tsp dried oregano or more to taste
1⁄4 lime juiced
salt & pepper, to taste
1⁄2 red pepper deseeded & cut into pieces
1⁄2 red onion cut in quarters
4 corn tortillas, small (25g ea) (or wheat) warmed
1⁄2 avocado (medium) thinly sliced lengthways
2 iceberg lettuce leaves finely shredded
4 sprigs of fresh coriander
1⁄4 lime to serve
Place the chicken breast in a bowl and add the paprika, oregano, lime juice, season with salt and pepper and mix to combine. Thread chicken onto bamboo skewers, alternating with the red pepper and onion.
Heat a grill pan, BBQ or frypan over medium-high heat and cook skewers, turning, for 6-8 minutes until cooked through. Divide skewers between plates and serve with warm tortillas, avocado, lettuce, coriander and a squeeze of fresh lime juice.
