Sweet Potato Spears with Yogurt Dip

300g sweet potatoes, orange cut into spears
2 tsp olive oil
1 tsp sea salt flakes
2 tbs Greek yogurt (or dairy-free alternative) or Tzatziki
Preheat oven to 220°C/fan 200°C/gas 7.
In a bowl, drizzle sweet potato with oil and season with sea salt, toss to coat.
Place in one layer, on a lined baking tray and roast for 20-25 minutes or until crispy. Remove to cool.
Dip into yogurt for a quick pre-workout snack.
