Up your smoothie game with this plant-based, pre-workout power bowl. Simon has packed it with the goodness of fruit, seeds and nuts. But his big secret is steamed and frozen cauliflower, which adds the creaminess you crave.

Ingredients

500g cauliflower steamed then frozen overnight

2 medium bananas sliced & frozen

2 Lebanese cucumbers sliced & frozen, optional

1 cup (250ml) milk, reduced fat (or dairy-free alternative)

4 tbs vanilla protein powder (or natural protein powder)

4 tbs hemp seeds

2 tbs cocoa powder (or cacao powder)

2 tsp spirulina powder

1 cup (40g) baby spinach leaves fresh or frozen

12 cup (80g) fresh mixed berries or frozen

2 sprigs of fresh mint leaves picked

Toppings

12 cup (80g) fresh mixed berries or frozen

4 tbs toasted granola (or gluten free)

2 tbs shaved coconut

Steam, cool and freeze cauliflower overnight. Slice banana and cucumber, if using, and freeze.

Blend all smoothie ingredients in a blender until smooth. Adding water, if required.

Pour into bowl and arrange toppings to serve.
