Choc Mint Smoothie Bowl

Up your smoothie game with this plant-based, pre-workout power bowl. Simon has packed it with the goodness of fruit, seeds and nuts. But his big secret is steamed and frozen cauliflower, which adds the creaminess you crave.

250g cauliflower steamed then frozen overnight
1 medium banana sliced & frozen
1 Lebanese cucumber sliced & frozen, optional
1⁄2 cup (125ml) milk, reduced fat (or dairy-free alternative)
2 tbs vanilla protein powder (or natural protein powder)
2 tbs hemp seeds
1 tbs cocoa powder (or cacao powder)
1 tsp spirulina powder
1⁄2 cup (20g) baby spinach leaves fresh or frozen
1⁄4 cup (40g) fresh mixed berries or frozen
1 sprig of fresh mint leaves picked
Toppings
1⁄2 cup fresh mixed berries of choice
2 tbs toasted muesli or granola (or gluten free)
2 tbs shaved coconut
Steam, cool and freeze cauliflower overnight. Slice banana and cucumber, if using, and freeze.
Blend all smoothie ingredients in a blender until smooth. Adding water, if required.
Divide between bowls and arrange toppings to serve.
