Matcha & Chocolate Chip Cookies

I do not like green eggs and ham ... but green cookies are a whole different story! This matcha and choc chip cookie combo is a hit at Palisa's Boon Cafe in Sydney - we tweaked the recipe to cut out sugar, but kept them choc-full of yummy.

1⁄8 cup (16 2⁄3g) cornflour
1⁄8 cup (8 1⁄3g) tapioca flour
1⁄8 cup (8 1⁄3g) rice flour
1⁄8 cup (3 1⁄3g) matcha green tea powder
1⁄8 tsp baking powder
1⁄8 tsp xanthan gum
1⁄8 tsp salt
1⁄8 cup (29 1⁄8g) 70% dark chocolate chips (or dairy-free alternative)
1⁄8 large egg
20 3⁄4g butter (or dairy-free alternative) melted
1⁄8 cup (8 1⁄3g) honey (rice malt syrup or maple syrup)
Preheat your oven on 150°C/fan 130°C/gas 2 and line a baking tray with baking paper. In a large bowl, combine all dry ingredients together including the chocolate chips.
In another large bowl, whisk eggs thoroughly, add melted butter and honey and whisk again until well combined.
Add wet mixture to the dry ingredients and fold to completely incorporate.
Roll tablespoons (55g) of dough into balls, gently flatten a little onto baking tray and bake for 20-25 mins. Remove from oven and cool on tray.
