1⁄2 tin of butter beans (400g tin) drained
300g firm tofu diced
1⁄2 red onion diced
2 celery stalks chopped
2 sprigs of parsley leaves stripped & chopped
salt & pepper, to taste
Combine ingredients in a bowl and toss lightly to combine, season with salt and pepper.
Place into a cup or container, enjoy as a post-training snack.
