Creamed Leeks with Chives

Sergio’s Creamed Leeks with Chives goes great with classic mains such as chicken and fish. Or make it vegan-friendly, just stir through some edamame and diced tofu.

1 tsp olive oil
3 leeks white part only, sliced
1⁄2 tsp apple cider vinegar
salt & pepper, to taste
1⁄4 cup (62 1⁄2g) coconut yogurt (dairy or other plant-based alternative)
1⁄2 tbs chives chopped
Heat a medium sized non-stick frypan over medium heat. Add oil and leeks and cook for 5-10 minutes until wilted and translucent.
Stir through vinegar, season with salt and pepper and cook for a few minutes more. Stir through yogurt and chives to serve.
