Ingredients

2 tbs tomato paste

1 wholemeal pita bread or pocket, large (100g) (or gluten free)

1 14 cup (150g) mozzarella sliced or grated

12 red onion very thinly sliced

100g pumpkin very thinly sliced or shaved

2 tsp pine nuts

2 fresh marjoram (sprigs) leaves picked (or thyme)

salt & pepper, to taste

1 cup (30g) rocket

Preheat oven and pizza tray or stone to 220°C/fan 200°C/gas 7.

Spread tomato paste evenly over pita and top with mozzarella, onion, pumpkin, pine nuts and marjoram. Season with salt and pepper.

Bake 10-15 minutes, until golden.

Top with rocket to serve.
