Grilled Squash, Mozzarella & Marjoram Pizza

2 tbs tomato paste
1 whole wheat pita bread or pocket, large (3 1/2 oz) (or gluten free)
1 1⁄4 cup (150g) mozzarella sliced or grated
1⁄2 red onion very thinly sliced
100g butternut squash very thinly sliced or shaved
2 tsp pine nuts
2 fresh marjoram (sprigs) leaves picked (or thyme)
salt & pepper to taste
1 cup (30g) arugula
Preheat oven and pizza pan or stone to 430°F/fan-forced 400°F.
Spread tomato paste evenly over pita and top with mozzarella, onion, squash, pine nuts and marjoram. Season with salt and pepper.
Bake 10-15 minutes, until golden.
Top with arugula to serve.
