2 tsp basil pesto
1⁄2 cup (120g) cottage cheese
4 thin slices (40g ea) wholegrain bread (or gluten free)
1 cup rocket
1 medium tomato sliced
4 artichoke hearts in brine drained & cut in half
salt & pepper, to taste
Mix pesto and cheese in a small bowl until combined.
Spread one slice of bread with cheese mixture, layer rocket, tomato and artichoke and season with salt and pepper. Top with remaining slice of bread, cut in half and serve.
