Ingredients

18 cup (26 23g) pitted dates

10g carrots grated

18 cup (5g) almond meal

18 tbs maple syrup (honey or rice malt syrup)

18 tsp ground cinnamon

18 tsp ground nutmeg

18 cup (7 12g) desiccated coconut

Place dates, carrots, almond meal, maple syrup and spices in a food processor and blend until fine and the mixture comes together.

Using wet hands, roll mixture into 12 even-sized balls and roll in coconut.

Store refrigerated in an airtight container for up to 5 days or frozen for 3 months.
