12 cup (80g) fresh or frozen blueberries

2 lemons 1 1/2 juiced & 1/2 thinly sliced

12 bunch of fresh mint (80g bunch) reserve a few sprigs & pick remaining leaves

6-8 ice cubes

2 cups (500ml) soda water

Muddle blueberries, lemon juice and picked mint leaves in a jug or jar.

Divide between tall glasses, add ice and soda water and top with lemon slices and mint sprigs to serve.
